Manu and Catherine have been collecting small parcels of vines on the outskirts of Clermont for the past five years. They now have 3.5 hectares made up of tiny plots all planted on basalt rich soils of varying densities. The area around Clermont is full of abandoned parcels of vines but their owners are often reluctant to sell or rent. A lot of this is because of inheritance laws and paperwork but Catherine thinks that people also hang on to the land to see an increase in value.

They have also taken over an orchard with which they have made a cider also using some quince and medlar trees. They have two cellars – one under their house and another a 10 minute drive away in what looks like an air-raid shelter.
