We first met Tom when he was a barman at a natural wine bar in Rennes (or was it Nantes), anyway even though I don't remember what town it was or exactly the job he did I do remember his incredible enthusiasm and curiosity for tasting wine. Tom found his match in Miha. They are both so passionate and intrigued by what they do and they have created a winery in their image. Unconventional, perhaps at times a little deviant but above all delicious.

They farm 5 hectares near Bedarieux in the Languedoc, and when I went to visit in spring, before the intense heat of summer had scared the green away, it seemed like paradise. They have little parcels of Cinsault, Aramon, Mourvedre, Terret and Chardonnay dotted across these rugged hills of chalky, clay soil. They are rightly proud of their vines and their work. The wines are floral and light, all hand pressed, never assembled together, each wine an expression of a vineyard, of a moment. - H.L.
