L’Eau qui dort

L'eau qui dort is the tale of a man and woman. It's the story of Lisa Le Postec and Paul Aublet-Cuvelier. A couple, who make wine individually (watch this space) but also make these vibrant wines together, as a way of experimenting with grape varieties and different soils and climates.
These are wines that are less introspective and more playful than they might be if they had made them on their own.
Lisa is from the Auvergne originally leaving to study Architecture and then Biology in Bordeaux, but turned off by research she morphed into Oenology. Travelling took her to wineries in Oregon, Argentina and New Zealand and then back to France to the Loire and the Beaujolais. Meeting Julien Merle kick starts her interest for natural wine.
She is hooked. Needing perhaps some female company after all this time in the rather male dominated world of wine she heads to Paris where she works as an agent with Fleur Godart.
