Ivo moved to France from Portugal in his early teens and after a few years working as a sommelier in Paris spent some time making wine with Jean-Marc Brignot and Chateau le Puy. In 2009 he settled in the Hérault on the foot-hills of the Larzac plateau. Here, the limestone soils, cold winters, hot summers and the prevailing Tramontane wind make the area almost perfect for growing vines and making wine. Ivo’s cellar is under his house in the beautiful village of Arboras but he has dreams (very detailed ones) of building a cellar in a new vineyard plot.
