Jérôme has been making wine with his wife Stéphanie on their 12 hectare plot in the Valee d’Ibie since 2006. In the Roman era the area was extremely important for winemaking and it is easy to see why with its cool nights. Jérôme’s vines are old and have never been treated with chemical pesticides or fertilisers. When we visited his vineyard for a pig roast party one summer we were amazed at how scrupulously clean and well organised his winery was despite the fact that there were hundreds of drinkers trailing around the place – the cellar was a clean, cool oasis. This is reflected in Jérôme's winemaking, which is immaculate.
