Martres-de-Veyre - Auvergne
Camille and Mikaël Hyvert bought Domaine des Trouillères in 2015, drawn to the Auvergne for its terroir and because of their passion for archaeology.
They farm 6 hectares scattered over a few different parcels on the slopes of the puy de Corent (basalt), the puy de Tobize, the puy de Marmant and the puy de la Montagne de Stras (part of the Massif du Sancy, overlooking their village). Their vines are planted between 380 and 500 meters abouve sea-level, are certified organic, and they practice biodynamics and bon sens paysan.
Their wines are fantastic and full of character – a joy.

Notes: This blends fruit from all of Camille and Mikaël’s plots. The chardonnay comes from 2024 and is direct pressed, then aged in barrels for 12 months; gamay and pinot noir from 2023 are macerated in whole clusters, before it is pressed and aged for 6 months in stoneware jars. This drinks like a medium red with smooth tannins and berry-like fruit. The addition of chardonnay lends some softness and richness, finishing with that distinctive Auvergnat smokiness.
