Notes: Albert's "Tot" wines are from a single day of harvest, where he passes through each of his plots and makes a selection of the ripest grapes. The grapes here are destemmed and macerated together for a day, before fermentation and aging in stainless steel tanks. The wine is disgorged the following spring. Gently mousse-y bubbles with a plush fruity quality – delicious.
