Notes: Pinot Noir vinified in ‘mille-feuille’ style – alternating layers of whole bunches and destemmed fruit until the tank is full. This then macerates for 14 days, and the juice was pressed just before fermentation ended. The wine is then aged in a mix of stoneware amphora (60%), and the remaining 40% in old barrels. Pithy, smoky, with a real intense savoury quality and a wash of fruit on the finish. One for the cellar, we recommend giving it a couple of years before opening. THIS WINE IS LIMITED TO ONE BOTTLE PER CUSTOMER. IF YOU ORDER MORE THAN THIS IT WILL BE CANCELLED AND REFUNDED.
