Prayssac - Cahors
Simon learnt winemaking and vineyard management with Olivier Cousin in the Loire. He took his learning back to his father’s vineyards in the South West where he now works his small vineyard area by horse, just as Cousin does. We are so used to big, bruiser-like wines from Cahors but Simon makes wines with and extraordinary mineral delicacy and finesse.
