Notes: Fuller bodied and opulent, with rippling acidity. As much a food-friendly fizz as it is an apéro. Daniele harvests a portion of the grapes in October, having let them intensify on the vines, then leaves them to dry. He uses the resulting must to referment this, giving it both length and depth.
