Notes: This is from a plot in the Hérault that Mattia and Chiara bought a few years ago to help supplement their grape production. All the grapes are macerated together for a month with daily (sometimes twice daily) pigeages . This is a big, punchy orange wine, with lovely aromatics, dense tannins, and opens up wonderfully. Mattia summed it up very well: "Un vin très complexe, pas à boire tous les jours mais avec un caractère unique, réglisse et pêche confite enrobé de tanins à boire avec une côte de cochon ou avec des fromages ou bien tout seul après un grand repas devant la cheminée."
