Notes: A wonderful and complex expression of chardonnay growing on limestone and clay-rich soils on the southern slopes of puy de Tobize. A blend of equal parts direct press juice and macerated fruit, the wine is fermented and aged in three different vessels! Stainless steel, old oak barrels, and terracotta amphora (dolia) are used, with each vessel adding layers of texture and drawing out herbal and saline notes. One to drink slowly.
