Notes: From a south-facing plot planted in 1996 at about 500m on limestone, shale and marl. Slow direct pressing, followed by ageing in old fûts. In spite of the south-facing plot this is incredibly light on its feet, with a crystalline minerality that keeps you coming back for more. After a bit of time opening up there is some lovely delicate white peach and some nutty depth.

Notes: A very welcome return of this wine for us. The grapes are destemmed and macerated for 20 days, and then aged on the lees in old acacia barrels. On the nose you can feel the aromatic varieties, reminiscent of elderflowers and a bit of jasmine. The palate has a pithy bite from the maceration, with a lovely lick of acidity for balance.

Notes: From a plot planted in 2000 at about 550m above sea-level. The grapes are macerated in whole bunches for about 2 weeks, and then aged on the lees in old barrels for a year. There’s a touch more tannin here than in La Boudeuse their other Pinot, making it more bloody and savoury. The time in barrel doesn’t dominate, and this would age very well indeed.
Pitch perfect Pinot. Auvergnat at heart, but with a Burgundian lilt.

Notes: From two plots: one large plot on the hillside which has volcanic soil, and a smaller parcel which is a mix of volcanic soil with blue marl. 10 to 12-day wholebunch maceration in stainless steel. Elevage is 12 months; 50% in a relatively new 500L Alsatian foudre, and 50% aged in old 228L barrels. This has some of that classic Pinot spice and more savoury notes, with soft tannins and some light fruit. This has great potential to age.

This is the weightier and more brooding companion to the lithe and fruit-forward Petites Fleur – dark fruit, dense inky tannin, with that classic Auvergnat smokiness on the finish.

This drinks like a medium red with smooth tannins and berry-like fruit. The addition of chardonnay lends some softness and richness, finishing with that distinctive Auvergnat smokiness.

Notes: MAGNUM Made from Chauvet’s best gamay grapes grown on steep slopes in Boudes; basalt-rich soil, mixed with different types of marl (mainly blue). 12-15 days of wholebunch maceration in large wooden vats. 18 months elevage in a mix of old 500L, 300L, and 228L barrels. Such a lovely expression of Auvergnat Gamay; smoke, flinty minerality, warm fruit, all balanced by a delicate touch of old barrels.
A rather special magnum to open up for the big day. Smoky, salty, with lots of bloody fruit.

Notes: MAGNUM A 2-week maceration of roughly equal parts of cinsault, grenache and syrah, aged in concrete tanks. Plummy fruit, balanced acidity and anise and clove-like spiced finish. This drinks well at room temperature but can be chilled down to lift up its acidity. Lovely to have with a platter of grilled meats!

The vines grow close to the sea, so there is always an element of salt and ozone to this wine. Full of Seville orange, bitter almond, and acacia…this can be decanted and do not get it too cold!

Notes: MAGNUM A new cuvée from Babass and his partner Agnes. This is from two plots, both planted in the late 1950s. This is everything we love about Anjou reds: light, almost thin texture, with fine powdery tannins, and lots of green spice.
Immensely drinkable, this is from Babass and Agnes’ old vines – light, lifted with crunchy fruit.

Notes: MAGNUM Macerated for 10 days outside the cellar, then aged in smaller demi-muids (the ageing is longer than the 75cl bottles). Light, bright and smokey with a silky finish. This has a touch more weight than previous vintages, adding to its smoothness, but it still has Jean-Marc’s characteristic zing.
Quite classic Alsatian Pinot, but with some zippy freshness and aromatic spice.
