Notes: Made with grapes from the Coteau de Gergovie planted on limestone and basalt. Half the grapes are pressed direct, and poured over the whole bunches of the other half. This is left to macerate for 10 days before a final pressing and ageing in tanks. A lovely expression of the Auvergne; this is bright and fresh, but also complex. Full of smokey, bloody notes and heaps of spice.
