Notes: The Gamay and Pinot come from the Saint Pourçain in Auvergne, and the Cinsault and Grenache come from the Terraces de Larzac in the Hérault. The Gamay is pressed direct, and poured over the whole bunches of the Pinot, this is left to macerate for 10 days. While the southern grapes are left in whole bunches and layered into a tank with gentle pigeage. This is a delight! Herbaceous and warm with some lovely salt and smoke from the Auvergnat grapes.
