The grapes are pressed and fermented on the lees, then aged in a mix of amphorae and concrete egg shaped tanks. The wine is hazy and incredibly vibrant. There’s a freshness and zestiness, and the floral Muscat notes are there at the finish.

Sous Le Végétal is a project centred around reintroducing the wider world with the wine of Samos, the western-most of the Greek islands and an ancient winemaking region. Jason Ligas from Greek Macedonia and our friend Patrick Bouju from the Auvergne have partnered to make wines that highlight the different terroirs of the island and different winemaking techniques.
